  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 1 14-ounce can diced tomatoes
  • 3 cups vegetable broth
  • 0.5 cup coconut milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped (optional) fresh cilantro
  • 1 tablespoon (optional) lemon juice

Directions

Step 1

Rinse the lentils under cold water until the water runs clear. Set aside.

Step 2

Heat the olive oil in a large saucepan or Dutch oven over medium heat.

Add the chopped onion to the pan and sauté for 4-5 minutes until softened and translucent.

Stir in the minced garlic and grated ginger. Cook for 1 minute, until fragrant.
