  • 500 grams Boneless lamb shoulder
  • 3 tablespoons Olive oil
  • 4 Garlic cloves, minced

  • 0.5 teaspoon Red chili flakes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 300 milliliters Chicken or vegetable stock
  • 200 grams Couscous
  • 1 tablespoon Butter
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Lemon zest
  • 4 Lemon wedges

Directions

Step 1

1. Cut the lamb shoulder into bite-sized pieces and pat dry with paper towels.

2. In a mixing bowl, combine ground cumin, smoked paprika, ground coriander, red chili flakes, salt, and black pepper. Toss the lamb pieces in the spice mixture until evenly coated.

3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the spiced lamb pieces and sear them on all sides until browned, about 5-7 minutes. Remove the lamb from the skillet and set aside.
