Ingredients

  • 8 pieces chicken drumsticks
  • 400 ml coconut milk
  • 300 ml water
  • 2 tablespoons cooking oil
  • 5 pieces shallots
  • 4 pieces garlic cloves
  • 2 inch piece ginger
  • 1 stalk lemongrass
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 3 pieces kaffir lime leaves
  • 2 pieces bay leaves
  • 1 piece star anise
  • 1 piece cinnamon stick

Directions

Step 1

Prepare the spices by peeling and slicing the shallots and garlic. Peel and roughly chop the ginger.

Step 2

Remove the outer layer of the lemongrass and chop it finely.

Step 3

In a blender, combine shallots, garlic, ginger, lemongrass, turmeric powder, coriander powder, cumin powder, red chili powder, and blend into a smooth paste using a little water if needed.

Heat the cooking oil in a large pot over medium heat.

Add the blended spice paste and sauté for about 5 minutes until fragrant.

Add the chicken drumsticks to the pot and stir well to coat them with the spice mixture.
