Ingredients

  • 4 medium Russet potatoes
  • 1 small Yellow onion
  • 1 medium Jalapeño pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Ground cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons All-purpose flour
  • 1 large Egg
  • 0.25 cup Vegetable oil
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and grate them using a box grater. Place the grated potatoes in a bowl of cold water to remove excess starch.

Step 2

Finely chop the yellow onion and jalapeño pepper, removing the seeds for less heat if preferred.

Step 3

After 5 minutes, drain the grated potatoes and squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.

Step 4

In a large mixing bowl, combine the grated potatoes, chopped onion, jalapeño, garlic powder, smoked paprika, cayenne pepper, salt, black pepper, and flour. Mix well.

Step 5

Beat the egg in a small bowl and add it to the potato mixture. Stir until the mixture is evenly coated.

Step 6

Heat the vegetable oil in a large skillet over medium heat until shimmering.

Step 7

Scoop about 1/4 cup of the potato mixture for each hash brown and shape into a flat patty. Place 2-3 patties in the skillet at a time, being careful not to overcrowd.

Step 8

Cook each hash brown for 3-4 minutes per side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.

Step 9

Transfer cooked hash browns to a plate lined with paper towels to drain excess oil. Repeat with the remaining potato mixture.

Step 10

Serve the spicy hash browns hot, garnished with fresh parsley if desired. Enjoy!
