Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons Butter
  • 0.25 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Cayenne pepper
  • 12 slices Thinly sliced deli ham (gluten-free)
  • 12 stalks Fresh asparagus spears
  • 1 cup Cheddar cheese, shredded
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Peel the russet potatoes and cut them into chunks. Add them to a pot of boiling salted water and cook until tender, about 15-20 minutes.

Step 2

Drain the potatoes and mash them with butter, milk, salt, black pepper, paprika, and cayenne pepper until smooth and creamy. Set aside to cool slightly.

Blanch the asparagus spears in boiling water for 2-3 minutes until tender-crisp, then transfer them to an ice bath to stop the cooking. Pat them dry and set aside.

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
