Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 14.5 ounces diced tomatoes, canned
  • 4 cups beef broth
  • 1 cup frozen corn
  • 1 cup frozen green beans
  • 1 medium potato, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat the olive oil in a large soup pot over medium-high heat.

Step 2

Add the ground beef to the pot and cook until browned, breaking it up into small pieces with a wooden spoon. Drain excess fat if needed, then set the beef aside.

Step 3

In the same pot, add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

Step 4

Stir in the minced garlic and red bell pepper. Cook for 1-2 minutes until fragrant.

Step 5

Return the cooked ground beef to the pot. Add the canned diced tomatoes, beef broth, diced potato, frozen corn, and frozen green beans.

Step 6

Mix in the ground cumin, paprika, chili powder, red pepper flakes, salt, and black pepper.

Step 7

Bring the soup to a boil. Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the potatoes are tender.

Step 8

Taste and adjust seasonings if needed.

Step 9

Remove the soup from heat and garnish with chopped fresh parsley, if desired.

Step 10

Serve hot and enjoy!
