Ingredients

  • 1 whole (medium, peeled and cored) Pineapple
  • 1 whole (medium, diced) Red bell pepper
  • 0.5 whole (medium, finely chopped) Red onion
  • 2 whole (seeded and finely diced) Jalapenos
  • 0.25 cup (chopped) Fresh cilantro
  • 1 tablespoon (grated) Fresh ginger
  • 1 whole (juiced) Lime
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Step 2

Cut the pineapple into thick rings, about 1/2 inch thick.

Step 3

Brush the pineapple rings with olive oil on both sides to prevent sticking.
