Ingredients

  • 1 pound new potatoes
  • 1 pound green beans
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon red chili flakes
  • 1 teaspoon paprika
  • 0.5 teaspoons ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Wash the new potatoes thoroughly and cut them into bite-sized chunks.

Step 2

Trim the ends of the green beans and cut them in half if they are particularly long.

Step 3

Bring a large pot of salted water to a boil. Add the potatoes and cook for 10-12 minutes, until they are fork-tender. Remove the potatoes with a slotted spoon and set them aside.

Step 4

Using the same boiling water, add the green beans and blanch them for 2-3 minutes, until they turn vibrant green but remain slightly crisp. Drain and set aside.

Step 5

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.

Step 6

Stir in the red chili flakes, paprika, ground cumin, salt, and black pepper. Cook for another 30 seconds to allow the spices to bloom.

Step 7

Add the cooked potatoes and green beans to the skillet. Toss them gently in the spiced oil mixture until they are evenly coated.

Step 8

Reduce the heat to low and cook for an additional 5-7 minutes, stirring occasionally, to allow the flavors to meld together.

Step 9

Remove the skillet from the heat and drizzle with lemon juice. Toss gently to combine.

Step 10

Sprinkle the dish with fresh parsley before serving. Serve warm and enjoy!
