  • 1.5 tablespoons palm sugar (or brown sugar)
  • 10 pieces cherry tomatoes, halved
  • 1 medium red onion, thinly sliced
  • 0.5 cup fresh cilantro, roughly chopped
  • 0.25 cup fresh mint leaves
  • 0.25 cup roasted peanuts, roughly chopped
  • 1 liter water
  • 1 teaspoon salt

Directions

Step 1

Soak the glass noodles in warm water for 10 minutes or until softened. Drain and set aside.

In a large pot, bring 1 liter of water to a boil. Add 1 teaspoon of salt and cook the softened noodles for about 2-3 minutes until tender but still chewy. Drain immediately, rinse with cold water, and set aside.
