Ingredients

  • 170 grams Unsalted butter
  • 150 grams Brown sugar
  • 120 milliliters Unsulfured molasses
  • 1 Large egg
  • 375 grams All-purpose flour
  • 1 teaspoon Baking soda
  • 2 teaspoons Ground ginger
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground cloves
  • 0.25 teaspoon Ground black pepper
  • 0.5 teaspoon Salt

Directions

Step 1

In a large mixing bowl, cream together the unsalted butter and brown sugar until light and fluffy, about 2-3 minutes.

Step 2

Add the molasses and egg to the butter mixture, and beat until fully combined.

Step 3

In a separate medium bowl, whisk together the all-purpose flour, baking soda, ground ginger, cinnamon, nutmeg, cloves, black pepper, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Be careful not to overmix.

Step 5

Divide the dough into two portions, flatten them into disks, and wrap tightly in plastic wrap. Refrigerate for at least 1 hour or until firm.

Step 6

Preheat your oven to 180°C (350°F) and line baking sheets with parchment paper.

Step 7

On a lightly floured surface, roll out one portion of the dough to about 1/4-inch thickness. Use cookie cutters to cut out shapes, and carefully transfer them to the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the edges are set and the cookies are lightly browned.

Step 9

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Decorate the cooled cookies as desired with royal icing or enjoy them plain!
