  • 1 cup low-sodium chicken broth
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 cup roasted, unsalted peanuts
  • 2 green onions, sliced
  • 4 cups cooked white or jasmine rice (optional, for serving)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.

Add 2 tablespoons of soy sauce and the cornstarch to the chicken. Mix well to coat and set aside for 10 minutes to marinate.
