Ingredients

  • 4 pieces Chicken thighs
  • 2 large Fresh peaches
  • 3 tablespoons Honey
  • 2 tablespoons Soy sauce
  • 1 teaspoon Red chili flakes
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Fresh thyme
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse and pat dry the chicken thighs. Season each piece generously with salt, black pepper, and thyme on both sides. Set aside.

Step 2

Slice the fresh peaches into wedges, removing the pits. Mince the garlic cloves.

Step 3

In a small bowl, mix honey, soy sauce, red chili flakes, and lemon juice to create the glaze. Stir well until combined.

Step 4

Heat olive oil in a large skillet over medium-high heat. Once hot, place the chicken thighs skin-side down and sear until golden brown, about 4-5 minutes. Flip and cook the other side for another 3-4 minutes.

Step 5

Remove the chicken from the skillet and set aside on a plate. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.

Step 6

Add the peach wedges into the skillet and cook for 3-4 minutes until slightly softened and caramelized. Pour in the honey-soy glaze, stirring to blend with the peach juices.

Step 7

Return the chicken thighs to the skillet and spoon the peach sauce over the top. Reduce the heat to low, cover, and simmer for 10-12 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 8

Taste the sauce and adjust seasoning with additional salt or chili flakes if desired.

Step 9

Serve the Spicy Georgia Peach Chicken hot with the caramelized peaches and sauce spooned over the top. Pair with rice, mashed potatoes, or roasted vegetables for a complete meal.
