  • 1 teaspoon dried oregano
  • 0.5 teaspoon crushed red pepper flakes
  • 2 cans canned diced tomatoes (14-ounce)
  • 1 can (15-ounce) black beans, drained and rinsed
  • 1 can (15-ounce) kidney beans, drained and rinsed
  • 3 cups vegetable broth
  • 1 cup frozen corn
  • 0.5 cup fresh cilantro, chopped
  • 1 whole lime, juiced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced onion and cook for 3-4 minutes until softened and translucent.
