Ingredients

  • 4 pieces (6-8 oz each) Pollock fillets
  • 1 cup All-purpose flour
  • 2 tablespoons Cornstarch
  • 2 teaspoons Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Cayenne pepper
  • 2 teaspoons Smoked paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Buttermilk
  • 2 tablespoons Hot sauce
  • 2 cups (for frying) Vegetable oil
  • 4 pieces (for serving) Lemon wedges
  • 2 tablespoons (chopped, for garnish) Fresh parsley

Directions

Step 1

Rinse the pollock fillets under cold water and pat them dry with paper towels. Set aside.

Step 2

In a shallow dish, combine the all-purpose flour, cornstarch, garlic powder, onion powder, cayenne pepper, smoked paprika, salt, and black pepper. Mix well to create the spice coating.

Step 3

In a separate bowl, whisk together the buttermilk and hot sauce.

Step 4

Dip each pollock fillet into the buttermilk mixture, ensuring it is fully coated, then dredge it in the flour mixture, pressing gently to adhere the coating to the fish. Repeat for all fillets and set them aside on a plate.

Step 5

In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test the oil by dropping in a small piece of the coating mixture; it should sizzle immediately.

Step 6

Carefully place the coated pollock fillets into the hot oil, frying 2-3 pieces at a time to avoid overcrowding. Cook for 3-4 minutes on each side, or until the coating is golden brown and crisp, and the fish is cooked through. Internal temperature should reach 145°F (63°C).

Step 7

Transfer the fried fillets to a paper towel-lined plate to drain excess oil. Repeat with the remaining fillets.

Step 8

Serve the spicy fried pollock hot, garnished with freshly chopped parsley and lemon wedges on the side for squeezing over the fish. Enjoy!
