Ingredients

  • 500 grams Beef sirloin
  • 60 grams Cornstarch
  • 1 large Egg
  • 30 grams Fresh ginger
  • 3 cloves Garlic
  • 60 ml Soy sauce
  • 30 ml Rice vinegar
  • 30 ml Hoisin sauce
  • 15 grams Brown sugar
  • 5 grams Red chili flakes
  • 15 ml Sesame oil
  • 250 ml Vegetable oil
  • 2 stalks Green onions
  • 10 grams Sesame seeds
  • 1 medium Red bell pepper

Directions

Step 1

Thinly slice the beef sirloin into strips, about 5 cm long and 0.5 cm thick. Set aside.

Step 2

In a mixing bowl, combine the cornstarch and beaten egg to create a batter. Add the beef strips to the batter, coating them evenly, and let marinate for 10 minutes.

Step 3

Peel and finely grate the fresh ginger and garlic. Thinly slice the red bell pepper and chop the green onions into small pieces. Set aside.

Step 4

In a small bowl, whisk together the soy sauce, rice vinegar, hoisin sauce, brown sugar, sesame oil, and red chili flakes to create the sauce base. Set aside.

Step 5

Heat the vegetable oil in a deep frying pan or wok over medium-high heat until shimmering but not smoking.

Step 6

Working in small batches, fry the beef strips in the hot oil until crispy and golden brown, approximately 2-3 minutes per batch. Use a slotted spoon to remove the beef and place it on a paper towel-lined plate to drain excess oil.

Step 7

Drain the frying oil from the pan, leaving about 1 tablespoon. Add the grated ginger and garlic to the pan and stir-fry for 30 seconds until aromatic.

Step 8

Add the sliced red bell pepper to the pan and stir-fry for 2 minutes until slightly softened.

Step 9

Pour the prepared sauce into the pan and bring it to a simmer. Cook for 1-2 minutes until slightly thickened.

Step 10

Return the crispy beef strips to the pan and toss to coat them thoroughly in the sauce.

Step 11

Remove from heat and garnish with chopped green onions and sesame seeds.

Step 12

Serve immediately with steamed rice or noodles for a complete meal.
