Ingredients

  • 4 pieces filet mignon steaks
  • 2 large sweet onions (such as Vidalia)
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1.5 teaspoons kosher salt
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Take the filet mignon steaks out of the refrigerator and let them come to room temperature (approximately 20 minutes).

Step 2

Peel the sweet onions and slice them into thick rings, about 1/2 inch thick, keeping the rings intact.

Step 3

In a small bowl, mix together smoked paprika, cayenne pepper, garlic powder, black pepper, and 1 teaspoon of kosher salt.

Step 4

Drizzle 2 tablespoons of olive oil over the filet mignon steaks and rub the spice mixture evenly onto all sides of the steaks.

Step 5

Drizzle the remaining 1 tablespoon of olive oil over the onion slices and sprinkle with 1/2 teaspoon of kosher salt.

Step 6

Preheat your grill or grill pan over medium-high heat. Once hot, place the onion rings on one side of the grill and cook for 3-4 minutes per side until softened and lightly charred. Remove and keep warm.

Step 7

Place the filet mignon steaks on the grill and cook for about 4-5 minutes per side for medium-rare, or longer if you prefer a different doneness. Use a meat thermometer to check the internal temperature (medium-rare is 135°F).

Step 8

Once cooked, remove the steaks from the grill and let them rest for 5 minutes to keep them juicy.

Step 9

Drizzle balsamic vinegar over the grilled onions before serving.

Step 10

Serve the spicy filet mignon steaks topped with grilled onions. Garnish with fresh parsley if desired.
