Ingredients

  • 2 Eggplant (large)
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Kashmiri red chili powder

  • 1 teaspoon Cumin powder
  • 1 teaspoon Garam masala
  • 1.5 teaspoons Salt
  • 2 tablespoons Lemon juice
  • 4 tablespoons Vegetable oil
  • 1 cup Plain yogurt
  • 2 teaspoons Garlic (minced)
  • 3 tablespoons Fresh cilantro (chopped)

Directions

Step 1

Wash the eggplants and slice them into 1/4-inch thick rounds. Lay the slices on a plate and sprinkle with 1 teaspoon of salt. Set aside for 10 minutes to draw out any bitterness.

Step 2

In a small bowl, mix together turmeric powder, Kashmiri red chili powder, coriander powder, cumin powder, garam masala, and the remaining 0.5 teaspoon of salt. Add lemon juice to form a thick paste. Adjust with water if needed.
