Ingredients

  • 4 pounds Pork shoulder (bone-in or boneless)
  • 2 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Brown sugar
  • 1 large Yellow onion, sliced
  • 2 peppers Chipotle peppers in adobo sauce
  • 12 ounces Dr Pepper (regular, not diet)
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a small bowl, combine kosher salt, black pepper, smoked paprika, cayenne pepper, garlic powder, onion powder, and brown sugar to create a dry rub.

Pat the pork shoulder dry with paper towels and rub the dry mixture all over the meat on all sides.

In a large oven-safe Dutch oven or heavy pot, heat olive oil over medium-high heat.
