Ingredients

  • 4 pieces (6 ounces each) Salmon fillets
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Sea salt
  • 8 cups Baby spinach
  • 3 cloves Fresh garlic, minced
  • 1 whole, sliced into wedges Lemon

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a small bowl, mix together garlic powder, paprika, cayenne pepper, black pepper, and sea salt.

Step 3

Pat the salmon fillets dry with paper towels and rub 1 tablespoon of olive oil over them. Then coat the salmon evenly with the spice mixture.

Step 4

Heat a large oven-safe skillet over medium-high heat and add 1 tablespoon of olive oil. Once heated, place the salmon fillets skin-side down in the skillet and sear for 2 minutes.

Step 5

Flip the salmon fillets and transfer the skillet to the preheated oven. Bake for 8-10 minutes, or until the salmon flakes easily with a fork.

Step 6

While the salmon is baking, heat the remaining 1 tablespoon of olive oil in a large sauté pan over medium heat.

Step 7

Add the minced garlic and cook for 30 seconds until fragrant. Add the baby spinach to the pan and sauté for 2-3 minutes, stirring occasionally, until just wilted. Remove from heat and season with a pinch of salt if desired.

Step 8

To serve, divide the sautéed spinach evenly among four plates. Place a salmon fillet on top of each bed of spinach and garnish with a wedge of lemon for squeezing over the dish.
