Ingredients

  • 500 grams beef sirloin or flank steak
  • 6 tablespoons cornstarch
  • 4 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon ginger (grated)
  • 3 cloves garlic (minced)
  • 0.5 teaspoon red chili flakes
  • 1 tablespoon sesame oil
  • 500 milliliters neutral frying oil (e.g., vegetable or canola oil)
  • 2 stalks green onions (sliced, for garnish)
  • 1 teaspoon sesame seeds (for garnish)

Directions

Step 1

Thinly slice the beef sirloin or flank steak into strips, about 1/4-inch thick. Pat the beef strips dry with a paper towel to remove any excess moisture.

Step 2

Place the beef in a mixing bowl and toss with 3 tablespoons of soy sauce. Let it marinate for at least 10 minutes while you prepare the other ingredients.

Step 3

In a separate small bowl, whisk together the remaining 1 tablespoon of soy sauce, rice vinegar, hoisin sauce, brown sugar, grated ginger, minced garlic, red chili flakes, and sesame oil. Set this sauce aside.

Step 4

Coat the marinated beef strips with cornstarch, ensuring each piece is evenly coated. Shake off any excess cornstarch.

Step 5

In a large wok or deep skillet, heat the neutral frying oil over medium-high heat until it reaches 175°C (350°F). You can test by dropping a small piece of beef into the oil; it should sizzle immediately.

Step 6

Carefully fry the beef strips in batches to avoid overcrowding the pan. Cook each batch for 3-4 minutes, or until the beef is golden brown and crispy. Remove the cooked beef and place it on a paper towel-lined plate to drain excess oil.

Step 7

Once all the beef is fried, carefully pour out most of the frying oil, leaving about 1 tablespoon in the wok. Reduce the heat to medium.

Step 8

Add the prepared sauce to the wok and cook for 1-2 minutes, stirring constantly, until it thickens slightly.

Step 9

Return the fried beef to the wok and toss to coat each piece in the sticky, spicy sauce.

Step 10

Turn off the heat and transfer the Spicy Crispy Beef to a serving plate. Garnish with sliced green onions and sesame seeds.

Step 11

Serve immediately with steamed rice or stir-fried vegetables on the side.
