Ingredients

  • 12 oz pasta (fettuccine or linguine)
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp red chili flakes
  • 1 tsp paprika
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice
  • 0 optional water for boiling pasta

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat.

Step 3

Season the shrimp with paprika, salt, and black pepper. Add the shrimp to the skillet in a single layer and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp from the skillet and set aside.

Step 4

In the same skillet, add the remaining olive oil and butter, as well as the minced garlic and red chili flakes. Sauté for 1-2 minutes until fragrant.

Step 5

Pour in the chicken broth and heavy cream, stirring to combine. Lower the heat to medium and let the sauce simmer for 3-4 minutes to thicken slightly.

Stir in the grated parmesan cheese until melted and smooth. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Add the cooked pasta to the skillet and toss to coat evenly in the sauce.

Return the shrimp to the skillet and gently mix with the pasta. Drizzle with lemon juice and adjust seasoning with additional salt and pepper if needed.

Garnish with fresh parsley and serve hot.
