  • 450 g lump crab meat
  • 45 g unsalted butter
  • 30 g all-purpose flour
  • 375 ml whole milk
  • 100 g white cheddar cheese
  • 30 g Parmesan cheese
  • 0.5 tsp cayenne pepper
  • 0.5 tsp paprika
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 75 g breadcrumbs
  • 15 ml olive oil
  • 10 g parsley, chopped
  • 4 pieces lemon wedges (for serving)

Directions

Step 1

Preheat your oven to 200°C (400°F). Grease an ovenproof baking dish or individual ramekins.

Step 2

In a medium saucepan over medium heat, melt the butter. Add the flour and whisk constantly for about 2 minutes to create a roux, allowing it to cook but not brown.

Step 3

Gradually add the milk to the roux, whisking continuously to prevent lumps, and cook for 4-5 minutes until the mixture thickens to a smooth and creamy consistency.

Step 4

Reduce the heat to low. Stir in the cheddar cheese, Parmesan cheese, cayenne pepper, paprika, Dijon mustard, salt, and black pepper. Continue stirring until the cheese has melted and the sauce is smooth.
