Directions

Step 1

Rinse and pat dry the Cornish game hens with paper towels. Cut each bird in half lengthwise using kitchen shears or a sharp knife, if desired, or leave them whole.

In a small bowl, mix together the salt, black pepper, smoked paprika, garlic powder, cayenne pepper, and ground cumin. Rub this spice mixture evenly over the game hens, making sure to coat the skin and cavity.
