Ingredients

  • 4 cups Green cabbage
  • 2 cups Red cabbage
  • 1 cup Carrots
  • 1 whole Jalapeño pepper
  • 1 cup Fresh cilantro
  • 0.5 cup Mayonnaise
  • 0.25 cup Greek yogurt
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Smoked paprika
  • 0.25 teaspoon Cayenne pepper
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Thinly slice the green cabbage and red cabbage, or use a food processor to shred them. Place the shredded cabbage in a large mixing bowl.

Step 2

Peel and julienne the carrots, then add them to the bowl with the cabbage.

Step 3

Finely dice the jalapeño pepper, removing the seeds for a milder heat if desired. Add the diced jalapeño to the bowl.

Step 4

Roughly chop the fresh cilantro and stir it into the mixture of cabbage, carrots, and jalapeño.

Step 5

In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, and Dijon mustard until smooth.

Step 6

Add the garlic powder, smoked paprika, cayenne pepper, salt, and black pepper to the dressing mixture and whisk again to combine all the flavors.

Step 7

Pour the spicy dressing over the vegetable mixture and toss everything together until the cabbage and carrots are evenly coated.

Step 8

Cover the bowl with plastic wrap or a lid and refrigerate for at least 20 minutes to allow the flavors to meld.

Step 9

Serve the spicy coleslaw chilled as a side dish or use it as a zesty topping for tacos, pulled pork, or burgers.
