  • 1 cucumber, julienned
  • 2 stalks green onion, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons cilantro leaves (optional)
  • 10 pieces ice cubes
  • 2 liters water (for boiling)
  • 1 teaspoon salt (for boiling water)

Directions

Step 1

Bring 2 liters of water to a boil in a large pot. Add 1 teaspoon of salt to the boiling water.

Step 2

Cook 250 grams of soba noodles according to the package instructions (usually about 4–5 minutes). Stir occasionally to prevent sticking.

Step 3

Once the noodles are cooked, drain them and immediately transfer them to a large bowl filled with ice water to cool. Let them sit for 2–3 minutes, then drain again and set aside.

In a small mixing bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 2 tablespoons of rice vinegar, 1 tablespoon of honey (or maple syrup), 1 tablespoon of sriracha, 1 teaspoon of grated ginger, and 1 teaspoon of minced garlic to create the spicy dressing.
