Ingredients

  • 1 lb Shrimp (peeled and deveined)

  • 1 tsp Salt
  • 1 Mango (diced)
  • 1 Red bell pepper (diced)
  • 1 Red chili (finely chopped)
  • 2 tbsp Fresh basil leaves (chopped)
  • 3 tbsp Lime juice
  • 1 cup Jasmine rice
  • 1.5 cups Water
  • 1 tsp Lime zest
  • 1 tbsp Honey
  • 1 tsp Soy sauce

Directions

Step 1

Rinse and prepare the jasmine rice: In a medium-sized pot, combine the jasmine rice, water, and lime zest. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.

Step 2

In a skillet, heat vegetable oil over medium-high heat. Add minced garlic and ginger, and sauté until fragrant, about 1 minute.

Stir in the red curry paste and cook for 1 minute to release the flavors.
