Ingredients

  • 2.5 cups All-purpose flour
  • 2 teaspoons Ground ginger
  • 1.5 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground cloves
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Cayenne pepper
  • 1 teaspoon Baking soda
  • 0.25 teaspoons Salt
  • 0.75 cups Unsalted butter, softened
  • 1 cups Brown sugar, packed
  • 1 Egg
  • 0.25 cups Unsulfured molasses
  • 0.5 cups Granulated sugar (for coating)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the flour, ground ginger, cinnamon, cloves, nutmeg, cayenne pepper, baking soda, and salt. Set aside.

Step 3

In a large bowl, using a hand mixer or stand mixer with a paddle attachment, cream the softened butter and brown sugar together on medium speed until light and fluffy, about 2-3 minutes.

Step 4

Beat in the egg and molasses until fully combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a cohesive dough forms. Do not overmix.

Step 6

Scoop tablespoon-sized portions of dough and roll them into balls.

Step 7

Pour the granulated sugar into a shallow bowl. Roll each dough ball in the sugar to coat completely.

Step 8

Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the cookies are lightly cracked on top and just set in the center.

Step 10

Remove the baking sheets from the oven and allow the cookies to cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Store the cookies in an airtight container at room temperature for up to one week.
