Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions, until al dente. Reserve 1 cup of pasta cooking water and drain the rest. Set the pasta aside.
While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
Slice the chorizo into thin coins or bite-sized pieces and add to the skillet. Cook for 4-5 minutes, stirring occasionally, until the chorizo is browned and slightly crispy. Remove the chorizo from the skillet and set aside.
Dice the onion and mince the garlic. Add both to the same skillet and sauté in the remaining oil until softened, about 3-4 minutes.
