Ingredients

  • 1.5 cups Roasted beets (peeled and pureed)
  • 1.75 cups All-purpose flour
  • 0.5 cup Unsweetened cocoa powder
  • 1.25 cups Granulated sugar
  • 1.5 teaspoons Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground cayenne pepper (optional, for heat)
  • 2 whole Large eggs
  • 0.5 cup Vegetable oil
  • 0.75 cup Buttermilk
  • 2 teaspoons Vanilla extract
  • 6 ounces Bittersweet chocolate (chopped, for glaze)
  • 0.5 cup Heavy cream (for glaze)
  • 2 tablespoons Honey (for glaze)
  • 2 tablespoons Unsalted butter (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easier removal.

Step 2

In a large bowl, whisk together the flour, cocoa powder, granulated sugar, baking soda, salt, cinnamon, and cayenne pepper (if using). Set aside.

Step 3

In another bowl, whisk together the pureed roasted beets, eggs, vegetable oil, buttermilk, and vanilla extract until smooth and well combined.

Step 4

Gradually fold the wet mixture into the dry ingredients, mixing until just combined. Be careful not to overmix, as this could make the cake dense.

Step 5

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 6

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Step 7

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 8

To make the glaze, place the chopped bittersweet chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream, honey, and butter over medium heat until just simmering. Pour the hot mixture over the chocolate and let sit for 2-3 minutes.

Step 9

Stir the chocolate mixture until smooth and glossy. Let it cool slightly until it thickens but is still pourable.

Step 10

Pour the glaze over the cooled cake, allowing it to drip down the sides. Use a spatula to spread it evenly if needed.

Step 11

Let the glaze set for at least 20 minutes before slicing and serving. Enjoy your Spicy Chocolate Beet Cake with Chocolate Glaze!
