Ingredients

  • 450 grams fresh green beans
  • 2 tablespoons vegetable oil
  • 4 cloves garlic
  • 1 tablespoon ginger
  • 1 teaspoon red chili flakes
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Wash and trim the ends of the green beans. Pat them dry with a clean kitchen towel or paper towels to avoid excessive splattering during cooking.

Step 2

Mince the garlic and ginger, and set aside.

Step 3

In a small bowl, mix together the soy sauce, hoisin sauce, sesame oil, sugar, cornstarch, and water. Whisk until the cornstarch dissolves and the mixture is smooth. Set aside.

Step 4

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil.

Step 5

Once the oil is hot, add the green beans. Stir-fry for 5–7 minutes, or until the green beans are blistered and tender but still crisp. Remove the green beans from the pan and set aside.

Step 6

Add the remaining 1 tablespoon of vegetable oil to the skillet. Reduce the heat slightly and add the minced garlic, ginger, and red chili flakes. Stir-fry for 30 seconds until fragrant, being careful not to burn the garlic.

Step 7

Return the green beans to the skillet and toss to combine with the aromatics.

Step 8

Pour the sauce over the green beans and stir immediately to coat. Continue cooking for 1–2 minutes until the sauce thickens slightly and evenly coats the green beans.

Step 9

Remove the skillet from heat and transfer the spicy green beans to a serving dish. Serve hot as a side or over rice for a complete meal.
