  • 15 pieces dried red chilies
  • 6 pieces garlic cloves
  • 1 inch ginger
  • 4 tablespoons white vinegar
  • 2 tablespoons dark soy sauce
  • 2 teaspoons brown sugar
  • 3 tablespoons vegetable oil
  • 1 cup water
  • 1 teaspoon salt

Directions

Step 1

Soak the dried red chilies in hot water for 10 minutes, or until softened. Remove stems and seeds for a milder sauce, or keep them for extra heat.

Step 2

In a blender, combine the soaked chilies, garlic cloves, ginger, white vinegar, and 1/4 cup of the soaking water. Blend until smooth and set aside.

Step 3

Heat the vegetable oil in a medium saucepan over medium heat. Add the chili paste and cook, stirring constantly, for 5 minutes to release the aroma.

Stir in the dark soy sauce, brown sugar, salt, and the remaining water. Simmer the mixture for an additional 5 minutes, allowing the flavors to meld.
