  • 3 tablespoons Dried red chili flakes
  • 1 teaspoon Sichuan peppercorns
  • 4 cloves Garlic, finely minced
  • 1 tablespoon Ginger, finely minced
  • 1 cup Neutral oil (e.g. canola, vegetable, or peanut oil)
  • 1 teaspoon Soy sauce (optional)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Sugar
  • 1 tablespoon Sesame seeds

Directions

Step 1

In a heatproof bowl, combine the dried red chili flakes, Sichuan peppercorns, garlic, ginger, sesame seeds, salt, and sugar.

Step 2

In a small saucepan, heat the neutral oil over medium heat until it reaches around 350°F (175°C). To check if the oil is ready, drop a small piece of garlic into the oil—it should sizzle immediately.

Step 3

Carefully pour the hot oil over the chili mixture in the bowl. Be cautious, as the oil will sizzle and bubble upon contact.

Step 4

Stir the mixture gently to release the aromas and evenly coat the ingredients with the hot oil.

Step 5

Let the chili oil cool to room temperature. Stir in the optional soy sauce if desired.

Step 6

Transfer the chili oil to a clean, airtight jar or container. Store it in the refrigerator for up to 1 month.
