Ingredients

  • 400 grams canned chickpeas (drained and rinsed)
  • 60 grams panko breadcrumbs
  • 0.5 piece red onion (finely chopped)
  • 2 pieces garlic cloves (minced)
  • 3 tablespoons fresh cilantro (chopped)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 4 pieces burger buns
  • 2 tablespoons sriracha or hot sauce (optional for serving)
  • 4 pieces lettuce leaves (optional for serving)
  • 4 slices sliced tomatoes (optional for serving)

Directions

Step 1

In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth but with a few chunks for texture.

Step 2

Add the panko breadcrumbs, finely chopped red onion, minced garlic, chopped cilantro, ground cumin, ground coriander, smoked paprika, chili powder, salt, black pepper, and 1 tablespoon of olive oil to the bowl. Mix well to combine.

Step 3

Sprinkle the flour over the mixture and mix until it holds together when pressed. If the mixture is too wet, add a little more flour or breadcrumbs gradually.

Step 4

Divide the mixture into 4 equal portions and shape each into a patty about 1/2 inch thick.
