  • 1.5 lbs chicken thighs (boneless, skinless)

  • 2 tbsp vegetable oil
  • 1 bell pepper (red, diced)
  • 2 green onions (chopped, for garnish)
  • 2 tbsp cilantro (chopped, for garnish)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tsp cornstarch
  • 2 tbsp water

Directions

Step 1

Cut the chicken thighs into bite-sized pieces. Season with salt and black pepper and set aside.

Step 2

In a small bowl, whisk together soy sauce, sriracha, honey, lime juice, and water. Set the sauce aside.

Step 3

In another small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Set aside.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
