Slice the chicken breast into thin strips and season with salt and black pepper. Set aside.
Core and slice the red, yellow, and green bell peppers into thin strips. Peel and mince the garlic cloves.
In a small bowl, mix the soy sauce, fish sauce, brown sugar, and lime juice. Stir to combine and set aside.
