  • 4 large Bell peppers
  • 2 tablespoons Olive oil
  • 1 pound Chicken breast

  • 0.5 teaspoon Black pepper
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Smoked paprika
  • 3 cloves Garlic cloves, minced
  • 1.5 cups Cooked rice
  • 1 15-ounce can Canned diced tomatoes
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Chopped fresh parsley
  • 1 teaspoon Hot sauce (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outer surface of the bell peppers with 1 tablespoon of olive oil. Place them upright in a baking dish and set aside.

Step 3

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Dice the chicken breast into small cubes and add it to the skillet. Season with salt, black pepper, chili powder, cumin, and smoked paprika.
