Slice the chicken breast into thin strips.
In a medium bowl, combine the chicken strips with 2 tablespoons of soy sauce and cornstarch. Mix until the chicken is well coated and let marinate for 10 minutes.
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
