Heat 2 tablespoons of olive oil in a skillet over medium heat. Finely dice the onion and mince the garlic cloves, then sauté them until softened, about 5 minutes.
Cut the chicken breast into small pieces and add them to the skillet. Cook until the chicken is cooked through, about 7-10 minutes. Use a spoon to break the chicken into smaller, shredded-like pieces as it cooks.

Repeat with the remaining dough and filling.
Place the rolls seam-side down on the prepared baking sheet. Brush the tops lightly with melted butter.
