Preheat your oven to 375°F (190°C).
Cut off the top of the sourdough bread loaf to create an opening, and scoop out the inside of the bread to create a hollow bowl. Save the bread pieces for dipping later.
In a large mixing bowl, combine the cheddar cheese, Monterey Jack cheese, cream cheese, jalapeños, garlic, hot sauce, sour cream, smoked paprika, salt, and black pepper. Mix well until fully combined.
Spoon the cheese mixture into the hollowed-out bread bowl, spreading it evenly.
Place the filled bread bowl on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the bread bowl is lightly toasted.
Remove from the oven and let it cool slightly for 5 minutes.
Garnish the top with chopped green onions.
Serve warm with reserved bread pieces, tortilla chips, or vegetable sticks for dipping. Enjoy your Spicy Cheese Bowl!
