  • 1 medium Carrot, julienned
  • 3 stalks Green onions, chopped
  • 1 cup Unsalted cashews
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon Sriracha or chili garlic sauce
  • 1 teaspoon Sugar
  • 2 tablespoons Water
  • 12 pieces Butter or Boston lettuce leaves
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

Cut the chicken breasts into small, bite-sized pieces.

Step 2

In a medium bowl, combine the soy sauce and cornstarch. Add the chicken pieces and toss to coat evenly. Let the chicken marinate for 10 minutes.

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and cook for 5-7 minutes until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set aside.
