Ingredients

  • 4 medium Carrots
  • 3 tablespoons Olive oil
  • 2 medium Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Red pepper flakes
  • 2 tablespoons Tahini
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash, peel, and chop the carrots into 1-inch chunks.

Step 2

Bring a pot of water to a boil and add the chopped carrots. Cook for about 10-12 minutes, or until the carrots are tender.

Step 3

Drain the carrots and let them cool for a few minutes.

Step 4

In a small pan, heat 1 tablespoon of olive oil over medium heat. Add the garlic, ground cumin, ground coriander, and red pepper flakes. Sauté for 1-2 minutes until fragrant, being careful not to burn the spices.
