Ingredients

  • 2.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.5 cup unsalted butter
  • 1 cup buttermilk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.5 cup powdered sugar
  • 2 tablespoons milk

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch square baking pan or line with parchment paper.

Step 2

In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cayenne pepper, and salt. Set aside.

Step 3

In a large bowl, use an electric mixer to cream the butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Reduce the mixer speed to low and alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Stir until just combined. Do not overmix.

Step 6

Pour the batter evenly into the prepared baking pan and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

While the cake cools, prepare the glaze by whisking together the powdered sugar and milk until smooth.

Step 9

Once the cake has cooled to room temperature, drizzle the glaze over the top.

Step 10

Slice and serve. Enjoy the subtle heat and warm spices of this buttermilk coffee cake!
