Ingredients

  • 1 head cauliflower
  • 0.5 cup all-purpose flour
  • 0.25 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.75 cup unsweetened almond milk (or any plant-based milk)
  • 1 cup panko breadcrumbs
  • 0.5 cup hot sauce
  • 3 tablespoons vegan butter (or regular butter if not vegan)
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1 optional ranch or blue cheese dressing for serving
  • 1 optional celery sticks for serving

Directions

Step 1

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper. Lightly grease the parchment to prevent sticking.

Step 2

Cut the cauliflower into bite-sized florets and set aside.

Step 3

In a large mixing bowl, whisk together the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper.

Step 4

Slowly add the almond milk to the dry ingredients and whisk until you achieve a smooth batter.

Step 5

Place the panko breadcrumbs in a separate shallow bowl.

Step 6

Dip each cauliflower floret into the batter, allowing excess batter to drip off, then roll it in the panko breadcrumbs to coat. Place the coated florets onto the prepared baking sheet.

Step 7

Bake the cauliflower for 20 minutes, flipping halfway through to ensure even browning.

Step 8

While the cauliflower is baking, prepare the buffalo sauce. In a small saucepan over low heat, combine the hot sauce, vegan butter, and honey (or maple syrup). Stir until the butter is melted, and the sauce is smooth and well combined. Remove from heat.

Step 9

After 20 minutes, remove the cauliflower from the oven and gently toss the baked florets in the prepared buffalo sauce until evenly coated.

Step 10

Return the sauce-coated cauliflower to the baking sheet and bake for an additional 10 minutes to allow the sauce to caramelize slightly.

Step 11

Remove the cauliflower wings from the oven and let cool for 5 minutes before serving.

Step 12

Serve the spicy buffalo cauliflower wings with optional ranch or blue cheese dressing and celery sticks on the side. Enjoy!
