  • 3 tablespoons Olive oil

  • 2 large Garlic cloves
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Smoked chili powder
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 2 tablespoons Chopped fresh parsley
  • 0 Optional toppings: hot sauce or shredded cheese

Directions

Step 1

Peel the russet potatoes and cut them into 1/2-inch cubes. Rinse them under cold water to remove excess starch and pat them dry with a clean kitchen towel or paper towel.

Step 2

Heat a large non-stick skillet or cast-iron pan over medium heat and add 2 tablespoons of olive oil. Once the oil is hot, add the potatoes in a single layer. Let them cook undisturbed for about 5-6 minutes to form a golden crust on one side.

Step 3

While the potatoes are cooking, dice the yellow onion, green bell pepper, and red bell pepper into small 1/2-inch pieces. Mince the garlic cloves.

Step 4

Flip the potatoes to cook the other sides evenly, stirring occasionally, for another 7-8 minutes until the potatoes are golden and crispy. Remove the potatoes from the pan and set aside.

Step 5

Add the remaining 1 tablespoon of olive oil to the skillet, then add the diced onion and bell peppers. Sauté for 5 minutes, stirring occasionally, until they are softened and slightly caramelized.

Step 6

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 7

Return the crispy potatoes to the skillet with the sautéed vegetables. Sprinkle in the paprika, cayenne pepper, smoked chili powder, ground black pepper, and salt. Toss everything together to evenly coat the potatoes and vegetables with the spices.

Step 8

Cook for another 2-3 minutes, stirring occasionally, to ensure the flavors meld together.

Step 9

Remove from heat and garnish with chopped fresh parsley. Serve hot with optional toppings like a drizzle of hot sauce or a sprinkling of shredded cheese.
