Ingredients

  • 2 tablespoons olive oil
  • 1 pound spicy sausage (ground or removed from casings)
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 cups potatoes, diced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 0.5 teaspoon red chili flakes
  • 6 large eggs
  • 0.5 cup milk
  • 1.5 cups shredded cheddar cheese
  • 2 tablespoons scallions, chopped
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with a little olive oil or nonstick spray.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the ground spicy sausage and cook, breaking it up with a wooden spoon, until browned. Remove the cooked sausage from the skillet and set aside.
