Ingredients

  • 12 oz bow-tie pasta (farfalle)
  • 2 tbsp olive oil
  • 3 cloves garlic cloves, minced
  • 1 tsp red chili flakes
  • 15 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup parmesan cheese, grated
  • 2 tbsp fresh basil leaves, chopped
  • 4 quart water (for boiling pasta)
  • 1 tbsp salt (for pasta water)

Directions

Step 1

Bring 4 quarts of water to a rolling boil in a large pot. Add 1 tablespoon of salt to the water.

Step 2

Add the bow-tie pasta to the boiling water and cook according to the package instructions until al dente, usually about 10-12 minutes.

Step 3

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add the minced garlic and red chili flakes to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 5

Stir in the crushed tomatoes and tomato paste. Mix well to combine.

Step 6

Add the dried oregano, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper. Stir and let the sauce simmer for 5-7 minutes, allowing the flavors to meld.

Step 7

Once the pasta is cooked, drain it and reserve 1/2 cup of the pasta cooking water.

Step 8

Add the cooked pasta to the skillet with the sauce, tossing to coat evenly. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.

Step 9

Remove the skillet from the heat and stir in half of the grated parmesan cheese and all of the chopped basil leaves.

Step 10

Serve the Spicy Bow Ties hot, garnished with the remaining parmesan cheese. Optionally, add extra chili flakes for additional heat.
