  • 1 can (15 oz) Black beans (canned, drained and rinsed)
  • 0.75 cup Breadcrumbs
  • 0.5 cup Red onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 0.25 teaspoon Cayenne pepper (optional, for extra heat)
  • 2 tablespoons Fresh cilantro (chopped)
  • 1 large Egg (lightly beaten)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil (for frying)

Directions

Step 1

In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth. A few chunks can be left for texture.

Step 2

Add the breadcrumbs, finely chopped red onion, minced garlic, ground cumin, smoked paprika, chili powder, cayenne pepper (if using), and fresh cilantro to the mashed black beans. Mix well to combine.

Step 3

Mix in the lightly beaten egg, salt, and black pepper. Stir until all the ingredients are evenly combined and the mixture holds together.

Step 4

Using your hands, shape the mixture into small, golf ball-sized meatballs (about 1 to 1.5 inches in diameter). You should get approximately 12-14 meatballs.
