  • 0.25 cup Fresh cilantro, chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Chili powder
  • 0.75 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lime juice
  • 0.25 cup Olive oil or vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some texture for added bite.

Add the panko breadcrumbs, egg, chopped scallions, minced garlic, cilantro, ground cumin, paprika, chili powder, salt, pepper, and lime juice to the mashed black beans.
