Ingredients

  • 450 grams Black beans
  • 0.5 medium, finely diced Red onion
  • 2 minced Garlic cloves
  • 60 grams Sweet corn kernels
  • 80 grams Breadcrumbs
  • 1 Egg
  • 1 teaspoons Cumin
  • 1 teaspoons Smoked paprika
  • 0.5 teaspoons Cayenne pepper
  • 1 teaspoons Chili powder
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 4 Burger buns
  • 4 leaves Lettuce
  • 4 Tomato slices

Directions

Step 1

In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some bean pieces for texture.

Step 2

Add the finely diced red onion, minced garlic, and sweet corn kernels to the mashed beans.

Step 3

In a separate small bowl, whisk the egg and then mix it into the bean mixture.

Add the breadcrumbs, cumin, smoked paprika, cayenne pepper, chili powder, salt, and black pepper to the mixture. Stir until fully combined. The mixture should hold together; if it's too wet, add a touch more breadcrumbs.
