Ingredients

  • 500 grams beetroots
  • 1 large red onion
  • 2 small red chili
  • 2 large garlic cloves
  • 1 tablespoon fresh ginger
  • 100 grams brown sugar
  • 120 milliliters apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

Directions

Step 1

Peel and grate the beetroots using a box grater or food processor. Set aside.

Step 2

Finely chop the red onion, garlic, and red chili. Grate the fresh ginger.

Step 3

Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and sauté for 5 minutes, or until softened.

Step 4

Stir in the garlic, chili, ginger, cumin, and coriander. Cook for 1-2 minutes until aromatic.

Step 5

Add the grated beetroot to the saucepan and mix well to combine with the spices.

Step 6

Sprinkle in the brown sugar and pour in the apple cider vinegar. Stir thoroughly to ensure everything is coated.

Step 7

Add the salt and bring the mixture to a simmer. Reduce the heat to low and cook uncovered for 30-35 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasoning if necessary. The relish should be thick and aromatic with a balance of sweet, tangy, and spicy flavors.

Step 9

Remove from heat and allow to cool slightly. Transfer the relish to sterilized jars or an airtight container.

Step 10

Store in the refrigerator for up to 2 weeks and enjoy as a side dish, condiment, or snack topping.
